The oden sauce base is the core broth for making oden, essentially a composite seasoning sauce formed by using Japanese-style dashi as the base and then seasoning it. It is characterized by a light salty and fresh taste, with the natural umami of ingredients such as kelp and bonito flakes. It can set off the original flavor of various ingredients while imparting a gentle salty and aromatic taste to the whole dish. |
